Lamb Burgers - Cooking on Auto-Pilot

Yesterday was a crazy day. I spent it looking through newly acquired cookbooks that people have sent me, trying to figure out which dishes to prepare and doing some writing. At some point I even checked the freezer to see what would defrost in time for dinner. It seems like I have lots of stock (chicken & beef) plus a couple of bags of chicken bones to make more, some frozen rhubarb - maybe I will try to make some of my own strawberry rhubarb pie.....Nah, but maybe I will make some jam or something. Anyway, the bottom line is besides frozen fruit and a couple of bags of shrimp (I think tomorrow's dinner) there wasn't too much that enticed me. That is until I found the last package of ground lamb. However by the time I made it to the kitchen, I was brain dead and needed to do something quick and easy because my Honey was on his way home from work. Unbelievable - where did the day go!?!

So I made some lamb burgers. This is the kind of thing I do when I'm on automatic pilot. No need for a recipe, although I did one a while ago, so you can get the quantities here if you need them. Just throw in an egg to bind, a huge dollop of my favorite mustards from Kozlik's - this time it's Lime and Honey, juice of a lemon, fresh oregano & parsley, lots of garlic and a handful of Panko crumbs. Mix it all up, throw it on the BBQ (or grill pan/fry pan/broiler if you don't have a BBQ), flip after 5 minutes, cook for another 4-5 minutes and supper's done.

This time we just had sliced tomatoes drizzled with olive oil and rice wine vinegar and sprinkled with basil chiffonade.

A perfect side would have been this roasted potato salad with mint, but...

1. It was too late to do it in time for supper, and more important...
2. I'm on the South Beach Diet, and am trying to stay away from potatoes - especially since I'm not so good at moderation and these are particularly delicious.
What do you make for dinner when you're too brain dead to think?

Saltyknees - I definitely do the mustard/mayo thing with tilapia, but I never thought of nuts on top. Thanks for the idea.
