Thyme Roasted Sweet Potato Wedges

Thyme Roasted Sweet Potatoes
Prep time: 5 minutes
Roasting time: 15-20 minutes
Serves 2

1 medium sweet potato, peeled and cubed (1-2” pieces)
1 tbsp olive oil
1 tsp fresh thyme
Salt & freshly ground black pepper

1. Preheat the oven to 425°F/220°C

2. In a large bowl place the sweet potato wedges and toss with the olive oil, thyme, salt and pepper.

3. Spread the wedges evenly on a lined baking sheet with sides, and bake for 10 minutes. Toss again and bake until done, probably another 5-10 minutes, depending on the size of the wedges.

4. Sprinkle with a little more salt & pepper and serve.

I love sweet potatoe fries, maybe a little too much actually. I sometimes throw them on the bbq for the last 5-10min to get that grilled flavor.
