Stir Fried Baby Bok Choy peeking out behind the lamb chop
Prep time: less than 5 minutes
Sauté time: 5 minutes or so
Serves 2
Ingredients:
6-8 tender baby bok choy split in half length-wise
½ onion, diced
1 tsp olive oil
1 tbsp water
1 tbsp fresh ginger, grated
2 cloves garlic, minced
1 tsp lite soy sauce
½ tsp sesame oil
Directions:
1. In a nonstick skillet over medium high heat, sauté the onion in a little oil until translucent and start to golden (just a few minutes)
2. Add garlic and ginger and stir until aromatic. Add the bok choy and water and let sit for a couple of minutes longer. Turn and leave until the bottoms start to soften
3. Add soy sauce and sesame oil and toss. Now you’re done. Just taste for seasoning and serve
