Sauteed Cauliflower with Parmesan Cheese

Cauliflower with Parmesan Cheese
From The Sonoma Diet

Prep time: 15 minutes
Cooking time: 8-10 minutes

Serves 4

Ingredients:
1 large cauliflower, cut into florets
2 tbsp extra virgin olive oil
¼ tsp crushed red pepper flakes
¼ cup flat leaf parsley, chopped
3 tbsp grated Parmesan cheese, (freshly grated is better, but purchased grated is okay too)
Freshly ground black pepper to taste
4 lemon wedges

Directions:
1. Heat a large heavy-bottomed skillet, add the olive oil and sauté the cauliflower florets and crushed pepper flakes over medium heat for 8 minutes or until the cauliflower is crisp tender.

2. Remove from heat, season to taste with pepper, toss with parsley, sprinkle with Parmesan and serve.

The lemon wedges add a lovely tang at the table.

Delicious! Made it for dinner tonight and the hubby loved it. Added some garlic for extra flavor. The pepper flakes and freshly grated Parmesan add more depth. Will totally be a dish we make over and over.
