Romaine Salad with Avocado Dressing - South Beach Diet Friendly

That's the salad peeking out behind the kebabs

Romaine Salad with Avocado Dressing

Prep time: 5 minutes
Serves 4

1 romaine heart (the inner, more tender leaves of romaine lettuce), coarsely chopped
1 small red onion, thinly sliced
1 red bell pepper, thinly sliced
½ cup chopped cilantro (fresh coriander)

Dressing adapted from South Beach Diet:
½ ripe avocado, coarsely mashed
1 clove fresh garlic, minced
Juice of 1 lime
1 tbsp Worcestershire sauce
1-2 tbsp olive oil
½ tsp freshly ground black pepper

1. In a small bowl, combine all the ingredients for the dressing. Taste for seasoning.

2. In a large bowl, combine all the salad ingredients (add whatever you like to my list). Add the salad dressing, toss and serve.
