Roasted Carrots with Oranges, Garlic & Thyme

Roasted Carrots with Garlic, Orange & Thyme
Adapted from Jamie Oliver's jamie's dinners

Serves 4
Prep time: 5 minutes
Total Cooking time: 30 minutes

4 medium carrots, peeled and sliced in ¼“ coins
1 tbsp sugar
1 tsp salt
1 tbsp butter
4-5 thyme sprigs
1 orange (unpeeled – don’t be like me and peel it!) cut in half and each half cut in 4
4 cloves of garlic, peeled

1. Boil the carrots, garlic, and thyme in salted, buttered water until tender (about 10 minutes)
2. Drain the carrots and roast in a preheated 400°F/200°C oven on a lipped cookie sheet with orange wedges, garlic, salt & pepper and some more thyme leaves for about 10 minutes.
