Mediterranean Style Meatloaf

Mediterranean Style Meatloaf
Prep time: 5 minutes
Cooking time: 45 minutes
Serves 4-6

1½ lb/450 g lean ground beef or lamb
½ cup oatmeal (not the instant kind)
½ cup packed fresh oregano and Italian parsley, chopped
2 large cloves of garlic, minced
1 egg, beaten
juice of 1 large lemon
salt & pepper
Dijon or other spicy mustard

1. Preheat oven to 350ºF/180°C.

2. In a bowl, mix all the ingredients with the exception of the mustard. Although, if you want your meatloaf to have more of a kick to it, add a tablespoon of mustard to this mixture.

3. Form into a loaf and place in loaf pan. Spread a generous amount of mustard over the meatloaf. Bake for 45 minutes or until the center feels firm.
I love to serve this with my new favorite mash – instead of potatoes, I use cauliflower.
