Cilantro Lime Roasted Salmon

Cilantro Lime & Chipotle Chili Roasted Salmon
Prep time: 5 minutes
Roasting time: 15 minutes or so

Serves 2

Ingredients:
½ tbsp olive oil
½ cup fresh cilantro chopped
More cilantro to make a bed for the salmon
2 salmon fillets, skin on
Juice of 1 lime
Sprinkling of chipotle chili powder to taste

Directions:
1. Preheat the oven to 400°F/200°C

2. Oil a baking dish large enough for the salmon and line it with cilantro. Then place the salmon, skin side down on top. Sprinkle with some chopped cilantro and chili powder

4. Bake for 15 minutes or until the fish is cooked throughout but not dry.

5. Once it’s done, remove from the pan, leaving the skin behind.

I served it on a bed of roasted asparagus which I cooked in a separate dish for 4-5 minutes.

The combo of cilantro & lime with chipotle chili powder makes this dish Latin for a more Mediterranean feel, use oregano or dill with lemon juice and sweet paprika or get creative and mix your own combo.

Rookie question: when do you squeeze the lime juice on-- before or after cooking? This recipe sounds simply and great, thanks!

OOPS! Thanks for pointing that out. I'd squirt the lime juice after it's cooked, just before serving.
