Pasta for Dinner - South Beach Style



It was pouring all day so all my good intentions to get some exercise by walking the 2 kilometers (about 1 mile) went out the window. Of course I could have worn my rain coat and taken my umbrella, but I didn't. So by the time 4:30 rolled around and it was time to think of making dinner, I really had no idea. I was in the mood for pasta - I have some great multi-grain fusili that works well on South Beach Diet and I remembered some Donna Hay pasta recipes I've made - always delicious. Her recipes are great because so many of them are made with staples I usually have on hand. In fact I have most of her cookbooks and all of her magazines. Her dishes are both simple to make and simply delicious to eat. The hardest part was deciding on arugula with capers and parmigiano or spinach, chickpeas and ricotta. I chose the latter, but both are scrumptious.

Sher, before I found Donna Hay, I never did chickpeas with pasta. Now it's quite frequent. I really love the combination.

I have never tried chickpeas and pasta, but it does sound good. The weather has changed so quickly that I'm having trouble on a daily basis trying to decide what to cook.
