Cauliflower – Sookhi Gobi
From Madhur Jaffrey’s Quick & Easy Indian Cookery
Prep time: 15 minutes
Cooking time: 10 minutes
Serves 4-6
Ingredients:
3 tbsp vegetable oil
½ tsp cumin seeds
½ tsp yellow mustard seeds
3 cloves garlic, peeled & minced
1” piece of fresh ginger, grated
1 lb/450 g cauliflower florets
1-3 hot green chilies chopped (I’m a wimp so I only used one and removed the seeds)
½ tsp garam masala
¼ tsp chili powder
4 tbsp water
Directions
1. In a large sauté pan or skillet, heat oil over high heat and add mustard and cumin seeds. As soon as they begin to pop (just a few seconds), add the garlic, ginger, cauliflower and chilies. Toss and stir fry for 7 minutes or until the florets are golden and just beginning to soften.
2. Add pepper, garam masala and chili powder. Toss the cauliflower, add the water, cover for 2-3 minutes and serve.
