This "ketchup" is actually part of the South Beach Dietmeat loaf that they give the recipe for in Phase Two of their book. I found the meatloaf bland, but loved the ketchup!
Prep time: 2 mintes
Cooking time: 15 minutes
Makes 1 cup
Ingredients:
1 6oz can tomato paste
1/2 cup dry red wine
1/2 cup water
2 cloves garlic, minced
1/2 tsp dried basil leaves
1/2 tsp dried oregano
1/4 tsp salt (to bring out the flavors)
Directions:
1. Combine everything in a small saucepan/pot on the stove and bring to a boil.
2. Lower the heat and simmer, uncovered for 15 minutes.
3. Let it cool before putting in a container and store in the fridge.
