Grilled Fruit with Lime & Ginger Marmalade
Grilled Fruit with Lime & Ginger Marmalade
Grilling time: 5 minutes or so
Serves 4
Ingredients:
4 tbsp butter
6 tbsp ginger marmalade
½ pineapple peeled and cut into slices
½ red Dragon Fruit, peeled and cut into slices **
¼ large papaya, peeled, seeded and cut into slices
Zest and juice of 2 limes
½ cup sugar
1 -2 tbsp water
Directions:
1. Rub the fruit with butter and marmalade and grill for a few minutes on both sides.
2. Bring the sugar and water to a boil in a small pot, add remaining marmalade and cook for a few minutes.
3. Remove the marmalade syrup from heat and let cool.
4. Arrange the grilled fruit on a plate, drizzle with the syrup, sprinkle with lime zest and juice and serve.
**It’s hard to find Dragon Fruit in North America, so substitute your favorite melon
